The noodles were long and tangled, a beautiful shade of yellow. We struggled to pull the noodles out of the bottom of the bowl, since I had forbidden cutting them. Long noodles, long life?
But the star of the show was the dressing. The zoodles had absorbed the tangy apple-citrusy sauce like a charm. Though they seemed plain, surely since they were in fact Whole 30, yet they were addictive. We finished the whole bowl and made a complete mess.
Citrus Garlic Vinaigrette
What You Need:
1 tbsp Dijon mustard
1/2 cup unsweetened applesauce
1 garlic clove, grated
drizzle EVOO, as you whisk (~1/2 cup)
Juice from 2 lemons + 1 clementine
Salt + pepper
What To Do:
Whisk or blend all the ingredients together, then pour over anything & everything.
Ps. I wanted to make a stupid metaphor about the dressing being the little black dress of your cooking repertoire. Dressed up or down. Fancy dinner, solo lunch. Too girly.
